Familiar flavours. A fresh perspective.

Chef Pihu Rajmalani · Kitchen Journal

Rose, saffron, cardamom and the warmth of familiar sweets can open up a whole world of baking ideas. Start with a flavour you love, then think about where it might belong.

Familiar flavours. A fresh perspective.

Begin with one flavour.

Choose a single flavour to lead your bake. Cardamom can bring warmth to a sponge or biscuit; rose can add a floral note to a cream. Use small amounts at first, especially with concentrated extracts, and taste where it is safe to do so.

Think in textures.

A soft sponge, a smooth cream and a crisp garnish bring contrast to a dessert. Plan how the parts will feel together, as well as how they will taste. A beautiful dessert is enjoyable to eat, too.

Build on a recipe you trust.

Begin with a tested recipe rather than changing every ingredient at once. Extra liquids, sweeteners or toppings can affect a bake’s structure. Make one thoughtful adjustment and write down what you changed.
